This is a wonderful meal filled with bright colors and great taste to be served up quickly for all of us who have a very busy schedule this time of year. Enjoy!

Menu tonight: Turkey Stir Fry Supper Chocolate Pudding and whipped Cream

Turkey Stir Fry Supper 1 ½ lbs boneless skinless turkey breast 2 tablespoons oil ¾ cup uncooked long grain rice 2 cans chicken broth 5 tablespoons soy sauce 2 cloves garlic, minced ½ teaspoon ground ginger ¼ teaspoon pepper 10 oz frozen broccoli spears, thawed 1 cup thinly sliced carrots 2 bunches green onions, sliced 3 tablespoons cornstarch 1 large can stir fry vegetables, drained


Stir Fry Dinner
Cut turkey into 2 inch strips. In a wok, stir fry turkey in small batches in oil for 7 minutes. Set aside. Add rice, 3 ½ cups broth, soy sauce, garlic, ginger, and pepper to the pan; bring to a boil. Reduce heat; cover and simmer for 15 minutes. Cut broccoli into 3 inch pieces, add along with carrots and onions to the rice mixture. Combine cornstarch and remaining broth; add to pan. Bring to a boil. Cook and stir for two minutes. Stir in turkey and the stir fry vegetables. Heat through and serve immediately.

Chocolate Pudding with Cream 2 packages of instant chocolate pudding 1 carton cool whip

Follow directions on package to prepare pudding. Refrigerate until ready to serve. Top with large scoops of cool whip.
