Menu tonight: Breakfast Pizza Fresh Strawberries and Cream
Breakfast Pizza 2 cups frozen shredded hash browns ½ teaspoons ground cumin ¼ teaspoon chili powder 3 teaspoons vegetable oil 4 eggs ¼ teaspoon salt 2 green onions, chopped ½ red pepper, diced 1 jalapeno pepper, finely chopped 2 cloves garlic, minced 1 16 oz prepared pizza shell (BOLI is what I use) ½ cup salsa ¾ cup shredded cheddar cheese
In a nonstick skillet cook has browns, cumin and chili powder in 1 tablespoon of oil over medium heat until golden brown. Remove and keep warm. In a bow, beat eggs, milk and salt; set aside. In same skillet, sauté onions, peppers and garlic in remaining oil until tender. Add egg mixture, cook and stir until almost set. Remove from heat. Place pizza crust on an ungreased 14 inch pizza pan. Spread with salsa; top with egg mixture, sprinkle with hash browns and cheese. Bake at 375 for 10 minutes or until cheese is melted.
Fresh Strawberries and Cream 2 pints fresh strawberries 1 carton cool whip
Wash strawberries, hull and slice. Place generous amount of berries in dessert bowls and top with generous helping of cool whip. So good and a nice cooling effect to a slightly spice supper.
