After a long day at work I wanted to fix a tasty and satisfying meat dish but didn’t want to spend a lot of time doing it. Scouring around in the cupboards I decided to try mixing these ingredients together to make stuffed peppers. The results were delicious and so very easy. Give it a try – my husband loved it.

Menu tonight: Easy Stuffed Peppers

Easy Stuffed Peppers

  • 2 large green peppers, halved and seeded
  • 1 ½ lb ground beef
  • 1 envelope Lipton Fiesta Sides – Mexican Rice

  • Spaghetti Sauce
  • 1 teaspoon crushed red pepper
  • 1 tablespoon oregano
  • 2 tablespoons garlic powder
  • ¼ cup dried onion flakes
  • Shredded extra sharp cheddar cheese

Cut tops off green peppers, remove seeds and ribs, cut in half. Place on paper towel in microwave and cook on high for 4 minutes or until softened but not thoroughly cooked. Let Cool. Meanwhile cook rice according to package instructions in a large saucepan. In a large skillet cook ground beef with spices and onion flakes until beef is no longer pink. Add to rice and mix well. Place green pepper halves in a greased 8 inch square pan. Fill each half with beef mixture. Pour spaghetti sauce over all peppers. Bake at 375 degrees for 1 hour top each pepper with shredded cheese and let sit in oven until melted. Serve immediately.
