Barbecued Chicken Bites

It’s time for a picnic. Spring is here. The birds are singing and the air is clean. It's time to get ready to picnic. This recipe is easy, tastes wonderful and will get many requests to be brought to all of your family gatherings in the years to come. I hope you enjoy it as much as my family has.

Menu tonight: Barbecued Chicken Bites Ranch Dressing Potato Salad Pistachio Éclair Dessert


Barbecued Chicken Bites

  • 1 egg
  • 2 tablespoons milk
  • 4 cups crushed barbecue flavored potato chips
  • ½ lb boneless, skinless chicken breasts, cut into 1 ½ inch cubes
  • Barbecue Sauce
In a shallow bowl, whisk egg and milk. Place potato chips in another bowl. Dip chicken in the egg mixture and then roll in the chips until well covered. Place in single layer on a greased cookie pan. Bake at 400 for 15 minutes. Serve with a side dish of barbecue sauce for dipping.

Ranch Dressing Potato Salad

  • 2 lbs small red potatoes
  • 8 oz bottle ranch dressing
  • 4 oz shredded cheddar cheese
  • 2.8 oz real bacon bits
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt
  • 1/3 cup red wine vinegar
Place potatoes in a large sauce pan and cover with water. Bring to a boil and cook until softened about 30 minutes. Meanwhile in a bowl combine the remaining ingredients. (The dressing will be thick). Drain the potatoes and cut into cubes; add to the dressing mixture and gently toss to coat. Cover and refrigerate for 2 hours or overnight.

Pistachio Éclair Dessert

  • 3 cups cold milk
  • 1 box instant pistachio pudding
  • 1 box instant vanilla pudding
  • 8 oz cool whip, thawed
  • 1 box (14 oz) graham crackers
  • 16 oz can chocolate frosting
In a large bowl whisk the milk and puddings for 2 minutes, let stand for two minutes. Fold in the cool whip. In a 13 x 9 x 2 dish, layer a 1/3 of the graham crackers and half of the pudding mixture. Repeat layer. Top with remaining graham crackers. Refrigerate 1 – 3 hours. Remove from refrigerator. Spoon the frosting into a microwave safe bowl, cover and heat on high for 20 seconds. Stir and spread over top of graham crackers. Chill for 20 minutes longer or until frosting is set.
