One of my favorite things to eat is shrimp and there are so many creative ways to fix it. You can use it in pasta, stews, salads, even on kabobs, and don’t forget shrimp cocktail. Here is a lighter dish that is easy to make, has healthy ingredients and is much lighter in fat than a traditional meat stew. While shrimp may not be so healthy for the person with high cholesterol, it has its benefits with no carbohydrates and no fat. Try this colorful and different recipe for your next meal.
Shrimp Stew
- 2 ½ cups reduced sodium chicken broth
- 5 cups broccoli florets
- 1 can (14 ½ ounces) diced tomatoes, un-drained
- 1 cup uncooked orzo
- 1 pound uncooked medium peeled and deviened shrimp
- ¾ teaspoon salt
- ¼ teaspoon pepper
- 2 teaspoons dried basil
- 2 tablespoons stick margarine or olive oil.
Boil the broth in a large saucepan or nonstick skillet. Next add in broccoli, orzo and tomatoes. Next simmer with no cover, after reducing heat. Stir occasionally while simmering for about 5 minutes. Next ad your salt and pepper, and shrimp.
Next cover your saucepan and cook for about 5 minutes or until the orzo has become tender and the shrimp has turned pink. Next stir in the basil and oil/margarine.
Substitution tips: Try whole grain rice instead of orzo. Or add additional broth in place of some of the oil.
