Blueberry Wheat Muffins

  • 1 cup whole wheat flour
  • 1 cup of white flour ( preferably unbleached )
  • 2 cup wheat germ
  • 1 tsp. salt
  • 5 tsp. baking powder
  • 2 eggs, beaten ( or 4 egg whites beaten )
  • 1 1/2 cups milk ( or soymilk, or water )
  • 1/2 cup canola oil
  • 1/2 cup sugar ( or honey, splenda)
  • 1 1/2 cups of fresh or frozen (not thawed) blueberries

Set your oven to reheat to 375 degrees. Grease 24 medium muffin cups. Next combine in a bowl flour, wheat germ, salt and baking powder. Then, in a second bowl combine egg, milk or water, oil and honey. Add the second mixture to the dry ingredients. Make sure you stir only until dry ingredients are moistened. Make sure you do not over mix. Gently fold in blueberries. Fill your muffin cups about 2/3 full. Bake for 15-18 minutes or until lightly browned. These are best when served warm.
