During these fast passed nights when you need to fix something quick and nutritious so you can get out the door fast to a football game or some other activity, you will find this salad will accomplish all these requirements. It is so delicious you will be tempted to savor every bite and perhaps be late to the game. Try it, you will find it will become a family favorite

Menu tonight: Southwestern Chicken Salad

Southwestern Chicken Salad 2 flour tortilla shells, cut into ½ inch strips Non-stick cooking spray – butter flavor 1 lb boneless skinless chicken breasts cut into 1 inch cubes 1 teaspoon olive oil 6 cups salad greens 1 can (14 oz) whole kernel corn, drained 1 can (14 oz) black beans, rinsed and drained 2 cups chopped tomatoes 1 medium green pepper, diced ½ cup sliced water chestnuts 1/3 cup chopped green onions ½ cup shredded cheddar cheese 2 teaspoons garlic powder 1 teaspoon red pepper 2/3 cups ranch dressing 4 teaspoons barbecue sauce, I used hot and spicy


Southwestern Salad
Place tortilla strips on a baking sheet, spritz both sides of strips with cooking spray. Bake at 350 for 5 minutes. Meanwhile heat oil in a large skillet, add chicken, garlic powder and red pepper, cook until chicken is no longer pink inside. Set aside.

Combine the salad greens, corn, beans, 1 cup tomatoes, green pepper, water chestnuts and onions. Arrange on a serving platter, Place chicken in center of salad, sprinkle with the cheese and remaining tomatoes. Arrange tortilla strips around the chicken.

In a small bowl combine the ranch dressing and barbecue sauce. Serve with the salad as a dressing.
