Now that all the children have left home, I cook for just the two of us. Nevertheless, sometimes I like to prepare larger dishes while I am preparing other meals so I can freeze some for later or have on hand when company drops in. This meal is one of those and doesn’t take a lot of time to prepare. Just add a loaf of your favorite hard bread and you have a meal fit for any occasion.

Menu tonight: Delicious Cabbage Rolls Mashed Potatoes

Delicious Cabbage Rolls * 4 large cabbage leaves * ½ lb ground beef * ½ cup chopped onion * 1 cup cooked rice * 1 teaspoon Worcestershire sauce * ½ teaspoon dry mustard * 1 egg * 2 cups spaghetti sauce * 2 tablespoons brown sugar * 6-8 potatoes

In a large sauce pan cook the cabbage leaves in boiling water for 8 minutes and set aside. In a large skillet brown the beef and onions, drain if necessary. Add the rice, Worcestershire sauce, egg, and mustard; mix well. Spoon about 1/3 cup of mixture onto each cabbage leaf. Fold in side and roll up leaf; place with seam side down in a greased 11 x 7 x 2 baking pan. Pour spaghetti sauce over rolls; sprinkle with brown sugar. Cover and bake at 350 for 50 minutes. Uncover and bake 10 minutes longer.


Delicious Cabbage Rolls
While the rolls are baking, peel and slice the potatoes, put into a sauce pan and cook until potatoes are soft. Drain, mash; add butter and milk.

This recipe has been cut to make for 2 people; just increase the ingredients to make for larger number of people.
