One night I was wondering how I could use up leftovers to make a tantalizing meal. I decided to take some items I had in the refrigerator and came up with this dish. My husband liked it so much he suggested I put it in the magazine. I hope you enjoy it also.

Menu tonight: Polish Sausage Spaghetti Garlic Bread Turtle Cheesecake

Polish Sausage Spaghetti

  • 2-3 teaspoons margarine
  • 1 lb polish sausage or kielbasa, thinly sliced
  • 1 large green pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 2 teaspoons garlic powder
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/8 teaspoon crushed red pepper
  • ¼ cup sugar
  • ½ cup red wine
  • 1 -2 cups spaghetti sauce
  • 1 large handful of spaghetti noodles
  • Parmesan cheese

Polish Sausage Spaghetti
* 1 loaf frozen garlic bread

In a large Dutch oven, cook spaghetti until done, drain and set aside. In large skillet melt the margarine, add the peppers, cover and cook until almost tender. Add the onions and polish sausage. Continue cooking until onions are transparent and peppers are soft. Add the spaghetti sauce, spices, sugar and wine. Continue cooking and stirring until heated through. Serve over top of cooked spaghetti. Sprinkle with Parmesan cheese. Serve with sliced garlic bread that has been toasted under the broiler according to package instructions.

The Turtle Cheesecake is one that I purchased from the Kiski Band Boosters fundraising. It was so delicious and went beautifully with this meal.
