I love salmon for a meal. So when Giant Eagle had salmon on sale I decided I would fix a dish that used salmon. I found this particular salmon in the fish case and decided to try it. It was one of the best salmon dishes I have ever fixed. My husband even liked it and he is not crazy about salmon. I hop you enjoy it also.

Menu tonight: Bourbon Salmon Florentine Vegetables Mashed Potatoes

Bourbon Marinate Salmon 1 lb boneless bourbon marinate salmon filets

Preheat oven to 400 degrees. Place fish in an oven proof baking dish in the center of the oven and bake for 16 minutes or until the center is cooked and the fish is easily flaked with a fork.


Gourmet Bay Salmon with Bourbon Marinade
1 cup Florentine Frozen Vegetables – cooked according to package directions. Drain and season with butter, salt and pepper.

  1. large potatoes

Peel and cube potatoes, place in a pan of boiling water. Cook until potatoes are soft when pierced with a fork. Drain, mash and season with butter, milk, salt and pepper.
