Summer brings lot of opportunity for great food. One of my favorites that a friend makes for potlucks is a fruit salad. You cannot go wrong with it. In so many ways it is great for you. There are also many ways to get great fruit at a reasonable price during the summer months. Check out http://www.pickyourown.org and find a local place to pick your own favorites.

Summer Fruit Salad

  • 1 can (8 ounce) of unsweetened pineapple chunks
  • 2 cups of fresh sliced strawberries
  • 2 cups of green grapes
  • 1 can (15 ounce ) of mandarin oranges drained
  • 1 cup of fresh blueberries
  • 1 cup of slice fresh peaches (or 8 ounce can)
  • 1/4 teaspoon of lemon juice
  • 1/4 cup of sugar or honey
  • 1/8 teaspoon of ground nutmeg

First drain pineapple saving ¼ of the juice (save the remaining separately - can discard). Combine your pineapple, strawberries, grapes, oranges, blueberries and peaches in a bowl. Then in another bowl combine the remaining ingredients with ¼ cup of reserved pineapple juice. Pour over fruit and combine. Refrigerate covered for several hours to let the flavors blend.
