Summer Fruit Salad
- 1 can (8 ounce) of unsweetened pineapple chunks
- 2 cups of fresh sliced strawberries
- 2 cups of green grapes
- 1 can (15 ounce ) of mandarin oranges drained
- 1 cup of fresh blueberries
- 1 cup of slice fresh peaches (or 8 ounce can)
- 1/4 teaspoon of lemon juice
- 1/4 cup of sugar or honey
- 1/8 teaspoon of ground nutmeg
First drain pineapple saving ¼ of the juice (save the remaining separately - can discard). Combine your pineapple, strawberries, grapes, oranges, blueberries and peaches in a bowl. Then in another bowl combine the remaining ingredients with ¼ cup of reserved pineapple juice. Pour over fruit and combine. Refrigerate covered for several hours to let the flavors blend.
