A simple dish that is full of flavor. Easy to prepare and is sure to please the heartiest of appetites.

Tonight’s Dinner: Barbecued Pork Loin Baked Potatoes Buttered Corn

Barbecued Pork Loin 2 lb pork loin half bottle barbecue sauce (I used Jack Daniels Honey Smoked) 3 onions, quartered 2 tablespoons garlic powder 1 teaspoon black pepper 3-4 dashed hot pepper sauce olive oil for coating pan 3–4 large baking potatoes 1 large bag frozen corn 3 tablespoons butter

Coat the bottom and sides of a 13 x 9 x 2 pan with olive oil. Place the pork loin in the center of pan, turning once to coat top. Spread the barbecue sauce over the top of the loin, sprinkle with the garlic powder and black pepper, shake pepper sauce over top of barbecue sauce. Arrange onions along both sides of the loin. Cover with aluminum foil, bake at 350 for 2 hours.

Wrap the potatoes in foil and set on oven rack to bake while loin is cooking.

Place corn in a microwave safe bowl, top with butter. Mike for about 5 minutes or until corn is done. Season with salt and pepper if desired.
