Soups are very nutritious and great for warming up in the winter. Try this chunky style tomato soup. The protein is supplied by the turkey. The best thing is it is low in saturated fat.

  • 8 to 10 large tomatoes (chopped and seeded)
  • 3 green peppers
  • 2 (14 – 16 ounce) cans of low sodium chicken broth
  • 1 (14 – 16 ounce ) can of vegetable broth
  • 1 ½ cups of water
  • 1 ½ teaspoons beef bullion granules
  • 2 minced garlic cloves
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon pepper
  • 3 cups of cooked turkey
  • 3 cups of cooked pasta
  • fresh chopped basil (optional)

Take a Dutch oven or large saucepan and combine the first 10 items.

Bring your mixture to a boil. Cover and simmer on reduced heat for about 2 hours.

Next stir in pasta and turkey and make sure mixture is heated through. Top with fresh basil.

Makes 12 servings
