Now that the hottest time of the year is upon us, I needed to fix something that would be refreshing, delicious and satisfying. This salad was the answer to my endeavor. I hope you find it an easy solution to one of your quick meal searches this summer.


Chunky Crabmeat Tossed Salad
- 1 bag baby arugula greens
- 1 bag baby spinach and carrot mixed greens
- 1 bag mixed salad greens
- 2 large tomatoes
- 1 large cucumber
- 3 stalks of celery with leaves, diced
- 1 large onion, diced
- 1 large green pepper, diced
- 1 package lump crabmeat
- 1 package cheese crumbles – your favorite kind Salad dressing of your choice


In a large salad bowl, combine the salad greens and toss. Peel and slice the cucumber; add the sliced tomatoes, celery, onion, and green pepper; toss again. Spread the crabmeat over the top and sprinkle with the cheese crumbles. Arrange on salad plates, top with your favorite dressing. This one was served with Asian Toasted Sesame.
