This is a delicious salad that is served warm. It's not only pretty and inviting; it warms you up on these cold winter nights. My family enjoyed it and has asked for it on more than one occasion.

Menu Tonight: Wholesome Chicken Pasta Salad Granny's Apple Cake

Wholesome Chicken Pasta Salad

  • 2 tablespoons red wine vinegar
  • 1 green pepper, cut into chunks
  • 1 red pepper, cut into chunks
  • 1 lb fresh mushrooms, sliced
  • 3 boneless, skinless chicken breasts, cut into cubes
  • 4 cups cooked tube pasta
  • 4 cups torn romaine lettuce
  • 11 oz can mandarin oranges, drained
  • 8 oz can pitted ripe olives, drained

In a bowl, combine vinegar, soy sauce, half the oil, sugar, and garlic. Stir well and set aside. In a skillet, sauté onion, peppers, and mushrooms in remaining oil until tender. Remove and keep war. In the same skillet, sauté chicken with more oil until no longer pink; drain. On a large platter, layer the lettuce, pasta; top with vegetable mixture; add chicken; spread oranges over top and then the olives. Stir the vinegar mixture and sprinkle over top of all the ingredients. Serve warm or cold.

Granny's Apple Cake

  • 1 2/3 cups sugar
  • 2 eggs
  • ½ cup unsweetened applesauce
  • 2 tablespoons canola oil
  • 2 teaspoons vanilla
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking powder
  • ¾ teaspoon salt
  • 4 apples peeled and chopped
  • ½ cup walnuts chopped

Frosting: * *4 oz cream cheese * 2 tablespoons butter, softened * 1 teaspoons vanilla * 1 cups powdered sugar

In a mixing bowl, combine the sugar, eggs, applesauce, oil, and vanilla. Beat for 2 minutes on medium speed. Combine the flour, baking soda, cinnamon, and salt; add to applesauce mixture and beat until combined. Fold in apples and nuts. Transfer to a 13 x 9 x 2 pan coated with cooking spray. Bake at 350° for 40 minutes or until toothpick comes out clean. Cool on rack. For Frosting: Combine cream cheese, butter, and vanilla in a small mixing bowl until smooth. Gradually beat in powdered sugar (mixture will be very soft). Spread over cooled cake.
