Today's Menu: Catfish Parmesan Halloween Corn Bread Armenian Cake

Catfish Parmesan

  • 8 skinned and pan-dressed catfish
  • 1 cup dry bread crumbs
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 teaspoon. paprika
  • 1/2 teaspoon whole oregano
  • 1/4 teaspoon whole basil
  • 2 teaspoons salt
  • 1/2 teaspoon. pepper
  • 1/2 cup melted butter
  • Lemon wedges
  • Parsley

Pat fish dry. Combine breadcrumbs, cheese and seasonings; stir well. Dip catfish in butter and roll each in crumb mixture. Arrange fish in well-greased 13 x 9 x 2 inch baking dish. Bake at 375 degrees about 25 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges and parsley.

Halloween Corn Bread

  • 1 1/4 cup flour
  • 1 tablespoon baking powder
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon salt
  • 3/4 teaspoon ginger
  • 3/4 cup cornmeal
  • 2 eggs, slightly beaten
  • 1/4 cup margarine, melted
  • 2/3 cup buttermilk
  • 3/4 cup cooked, mashed squash

Heat oven to 350 degrees. Stir dry ingredients together. Mix eggs, margarine, buttermilk and squash together. Add all at once to dry ingredients, stirring just until dry ingredients are moistened. Pour into greased 8 x 8 x 2 inch baking pan or fill greased muffin cups 2/3 full. Bake bread for 35-40 minutes or muffins for 30-35 minutes.

Armenian Cake

  • 2 cup sifted flour
  • 2 cup dark brown sugar
  • /2 cup butter
  • 1 beaten egg
  • 1 teaspoon nutmeg
  • 1 cup sour cream
  • 1 teaspoon baking soda

Blend together the flour, dark brown sugar and butter. Place half of mixture in bottom of greased 9"x9" pan. To remaining mixture add the remaining ingredients. Pour mixture into cake pan. Top with cinnamon, 1/4 cup sugar and 1 cup nuts. Pecans, walnuts or almonds may be used. Bake at 350 degrees for 40 minutes. DO NOT OPEN OVEN DOOR. Cool in pan. Shopping List:
